
Vietnamese Catfish with Tomato Recipe
Serves/Makes: 4
Ingredients:
- 4 catfish or basa fish fillets (about 6 ounces each) , skinned
- 1 (1 pound) can chopped peeled tomatoes
- 1 onion, finely chopped
- 1 teaspoon brown sugar
- Handful fresh thyme leaves
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
How to cook Vietnamese Catfish with Tomato:
- Saute the onion in a large frying pan, about 5 minutes.
- Add the tomatoes, sugar, thyme and soy sauce. Bring to boil and simmer for 5 minutes until the sauce is thickening.
- Reduce the heat to a bubble and slip the catfish fillets into the sauce.
- Cover with a lid and simmer for about 8 minutes, until the fish flakes.
- Serve the simmered catfish with boiled plain new potatoes and fresh buttered vegetables.
