
Cajun Shrimp Cornbread Recipe
Serves/Makes: 24 (2-inch) squares
Ingredients:
- 1 cup raw shrimp, peeled and deveined
- 2 eggs
- 1 (16-ounce) can cream style corn
- 1/3 cup oil
- 1/2 cup grated Cheddar cheese
- 1 cup white corn meal
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup chopped onion
- Chopped jalapeno peppers, to taste
How to cook Cajun Shrimp Cornbread:
- Combine eggs, corn and oil; add cheese and mix.
- Stir in corn meal, baking soda and salt; add shrimp, onions and jalapeno peppers and mix.
- Bake at 350°F for 45 minutes in a greased 9 x 12-inch baking pan.
