
Filipino Piquant Shrimp Recipe
Ingredients:
- 1 pound medium-size shrimps
- 5 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 tablespoon lemon juice
- 1/2 cup white wine
- 1 tablespoon hot chili sauce
- 1 to 2 tablespoons bread crumbs
- Green olives for garnish
- 3 tablespoons Spanish tomato sauce (see the recipe below)
How to cook Filipino Piquant Shrimp:
- Prepare Spanish tomato sauce. Set aside.
- Shell and devein shrimps. Set aside.
- Brown garlic in olive oil. Add shrimps, lemon juice, wine and hot chili sauce.
- Add 3 tablespoons Spanish tomato sauce. Cook for another minute.
- Thicken sauce with bread crumbs.
- Serve hot over white rice, garnished with green olives.
Spanish Tomato Sauce (Salsa De Tomates) Recipe
Spanish Tomato Sauce (Salsa De Tomates) Ingredients:
- 3 tablespoons olive oil
- 2 large onions, chopped
- 2 cloves garlic, crushed
- 2 red peppers, cored, seeded and chopped
- 1 can tomatoes (about 14 ounces/400 g), chopped but undrained
- 2 tablespoons chopped fresh parsley
- 1 teaspoon chopped fresh thyme
- Salt and freshly ground black pepper
- 2 tablespoons fino (dry) sherry
How to cook Spanish Tomato Sauce (Salsa De Tomates):
- Warm the olive oil in a saucepan. Add the onion and cook gently for about 10 minutes, until transparent.
- Add the garlic and cook for 1 minute. Add the pepper, cover and cook over low heat for 15 minutes.
- Add the tomatoes with their liquid, parsley, thyme and salt and pepper to taste. Cover and cook for about 20 minutes, until thick.
- Puree with a hand-held blender in the pan or in a food processor or with a food mill.
- Return to the pan, add the sherry, adjust the seasoning and warm through.
- Use immediately or transfer to a sealed, sterilised jar and store in the refrigerator for up to 2 weeks.
