
Simmered Fish with Egg (Kardillong Isda) Recipe
Ingredients:
- 1 (2-pound) fish, whole or sliced into quarters, or 1 1/2 pounds fish fillets
- 1 1/2 teaspoons salt
- 1 1/2 teaspoons lemon juice
- 1/2 cup flour (optional)
- 1 cup cooking oil
- 2 cloves garlic, crushed
- 1/4 cup sliced onion
- 3/4 cup diced ripe tomato
- 1/2 cup water
- Salt and pepper to taste
- 2 eggs, slightly beaten
How to cook Simmered Fish with Egg (Kardillong Isda):
- Sprinkle salt and lemon juice on fish. Fry in oil until brown. (When using fish fillets, shake each fillet in a small plastic bag with 1/2 cup flour before frying.)
- Use 2 tablespoons of oil for frying if fish is not floured, 3 tablespoons if it is. Set aside.
- In 3 tablespoons hot oil saute garlic until brown; add onion and tomato. Cook until onion is transparent and tomato is soft.
- Add the fried fish and water. Simmer for 5 minutes.
- Season with salt and pepper. Add slightly beaten eggs.
- Simmer for another 2 minutes.
- Serve the Kardillong Isda hot with steamed rice.
